Chestnut Salad
Serves: 4
Ingredients
  • 1 lb. fresh Forest Grove chestnuts
  • 3 large stalks diced celery
  • 1 large apple
  • 1 Tablespoon mayonaise or plain yogurt
  • 2 teaspoons raspberry vinegar
  • 1 head Romaine lettuce
Instructions
  1. Roast and peel the chestnuts (refer to chestnut cooking & storing tips).
  2. Chill and then slice and put in a bowl with diced celery.
  3. Peel, core and chop the apple and add to the bowl.
  4. Stir in the mayoniase or yogurt and vinegar and spoon onto a bed of lettuce.
