| Chestnut Salad |
Serves: 4
Ingredients
- 1 lb. fresh Forest Grove chestnuts
- 3 large stalks diced celery
- 1 large apple
- 1 Tablespoon mayonaise or plain yogurt
- 2 teaspoons raspberry vinegar
- 1 head Romaine lettuce
Instructions
- Roast and peel the chestnuts (refer to chestnut cooking & storing tips).
- Chill and then slice and put in a bowl with diced celery.
- Peel, core and chop the apple and add to the bowl.
- Stir in the mayoniase or yogurt and vinegar and spoon onto a bed of lettuce.
