Ingredients
  • 1 (3 oz.) pkg. lime-flavored gelatin
  • 1 c. heavy or whipping cream
  • 4 tsp. sugar
  • 1/4 tsp. almond extract
  • 2 c. thawed frozen red tart cherries in juice, drained
Instructions
  1. Prepare gelatin as label directs; refrigerate until set.
  2. In small mixer bowl, with mixer at medium speed, beat cream, sugar and almond extract until soft peaks form; set aside.
  3. Reserve 6 cherries for garnish.
  4. To serve, into each of six 8 oz. parfait glasses, alternate layers of gelatin, cherries and cream mixture, ending with cream.
  5. Garnish with reserved cherries. Serve immediately. Makes 6 servings.
