Cherry Nut Bread

Ingredients
  • 2 C flour
  • 1 1/2 t baking powder
  • 1 egg
  • 1 T grated orange peel
  • 1 C tart cherries, well drained, coarsely chopped
  • 1/2 C chopped nuts
  • 1 cup + 2 T sugar
  • 1/4 C shortening
  • 1/2 C orange juice
  • 2 T cherry juice or warm water
Instructions
  1. Sift together flour, sugar and baking powder. Cut in shortening.
  2. Stir in eggs, orange juice, orange peel, and cherry juice.
  3. Fold in cherries and nuts.
  4. Pour into greased individual loaf pans (5 x 2 1/2 x 2 1/4) to make 4 loaves or (3 7/8 x 1 1/2 x 1 3/8) for 6 mini loaves.
  5. Bake at 350 degrees F for 25 to 30 minutes.
