Cherry Muffins
Recipe Type: Bread
Ingredients
  • 3 1/3 C all purpose flour
  • 1 T + 1 t of baking powder
  • 1 egg, beaten
  • 2/3 C tart cherries, well drained
  • 2 t almond flavoring
  • 1 3/4 C milk
  • 1/3 C vegetable oil
  • 1/3 C chopped nuts (optional)
  • 1 t salt
  • 1/4 C sugar
Instructions
  1. Combine flour, baking powder, salt, and sugar in a mixing bowl.
  2. Combine eggs, milk, fat and almond flavoring. Add to dry ingredients and mix only to blend (low speed) about 30 seconds. Batter will still be lumpy.
  3. Gently fold in the drained cherries and chopped nuts.
  4. Put batter into well greased muffin tins about 2/3 full.
  5. Handle batter as little as possible.
  6. Bake at 400 degrees F for 25 minutes.
