| Chestnut Stuffing |
Recipe Type: Side Dish
Ingredients
- 1-1/2 lbs. cooked Forest Grove chestnuts, peeled (refer to chestnut cooking & storing tips)
- 1 lb. home-style bread with crust removed,
- lightly toasted & cubed.
- 1 lb. sausage cooked & crumbled
- 1/2-3/4 cup chicken or turkey stock
- 2 large onions, minced
- 2 Tablespoons oil
- 1/4 stick unsalted butter
- 1 cup minced celery
- 3 Tablespoons fresh sage
- 2 Tablespoons fresh parsley
Instructions
- Put toasted bread cubes in a large bowl.
- Saute onion & celery in oil & butter unitl soft, add sausage & fresh sage.
- Stir thoroughly & cook a few minutes to combine flavors. Add to bread cubes.
- Stir in the Forest Grove chestnuts, parsley, and enough stock to moisten.
- Place the stuffing in the turkey and cook, according to poultry directions.
Notes
Stuffing can also be placed in a buttered baking dish & baked, covered in a 350 degree oven for about an hour. Remove cover during the last 20 minutes.
