Recipes – Chestnut Stuffing

Chestnut Stuffing
Recipe Type: Side Dish
Ingredients
  • 1-1/2 lbs. cooked Forest Grove chestnuts, peeled (refer to chestnut cooking & storing tips)
  • 1 lb. home-style bread with crust removed,
  • lightly toasted & cubed.
  • 1 lb. sausage cooked & crumbled
  • 1/2-3/4 cup chicken or turkey stock
  • 2 large onions, minced
  • 2 Tablespoons oil
  • 1/4 stick unsalted butter
  • 1 cup minced celery
  • 3 Tablespoons fresh sage
  • 2 Tablespoons fresh parsley
Instructions
  1. Put toasted bread cubes in a large bowl.
  2. Saute onion & celery in oil & butter unitl soft, add sausage & fresh sage.
  3. Stir thoroughly & cook a few minutes to combine flavors. Add to bread cubes.
  4. Stir in the Forest Grove chestnuts, parsley, and enough stock to moisten.
  5. Place the stuffing in the turkey and cook, according to poultry directions.
Notes

Stuffing can also be placed in a buttered baking dish & baked, covered in a 350 degree oven for about an hour. Remove cover during the last 20 minutes.
